Their focus is to supply quality wines from small, independent producers that are made with passion and integrity whilst being true to environmental issues. Their wines are a true expression of their origin and fit with my passionate approach to food.

James Close
After 16 generations this prestigious Champagne house is still run by the Philipponnat family. Based in MareuilsurAy in the heart of Champagne, their production is tiny compared to well-known Grande Marques brands. Particularly known for its Pinot Noir production, Champagne Philipponnnat owns 17 hectares of Grands Crus and Premiers Crus vineyards. They are also known for using a large amount of “Vins de Reserve” vinified in oak barrel which give their wines their trademark structure and depth. Champagne Philipponnat is represented by many Michelin starred restaurants around the world.

Largely dominated by Pinot Noir (60%) with a little bit of Chardonnay and a smattering of Pinot Meunier, two third of the grapes come from Grand Crus and Premiers Crus Vineyards. Disgorged in October 2011, this Champagne has a wonderful structure and intensity whilst remaining fresh, zesty and elegant. Long mineral finish.

Dry but fruity. Lovely red berries and strawberry characters with hints of candied citrus fruit characters. Dominated by Pinot Noir, 24% of reserve wines were used to make this wine.

We recently visited the Philipponnat House and we were very fortunate to be present when the harvest had just started. We were simply in awe of how much work is involved in producing high quality Champagne. So much care is involved in the vineyard and in the winery.
Being a family owned and run quality producer, we felt Philipponnat had a natural fit with what we are trying to achieve at the Raby Hunt.
