Introduction
Tur mer ic, Curcum a longa Linn. (Haldi) of family Zing ibera cea e is native to India and Southeast Asia. India is the largest producer, consumer and exporter oft ur mer ic ; Indian turmeric has been known tot he worlds ince ancient times. Turmeric, derived from rhizome contains brilliant yellow orange colour. It has been used as ad ye, medicine and flavouring since BC. Turmeric is closely related to ginger. With its rich c urcu min content, which imparts the distinctive yellow colour, warm and mellow flavour and other inherent qualities, Indian turmeric is considered the best int he world. India exports turmeric to discerning countries like Japan, Sr i Lanka, Iran, North African countries, US and UK. In India over hectares are under turmeric cultivation with at ot a l production of tonnes.
