Smoked wild salmon holds an important high-end niche in the Italian market. Numerous Italian smokers produce smoked wild king, sockeye and coho salmon, making Italy one of Alaska’s leading markets for high-value, smoking-quality wild salmon. Italy’s economic downturn has hurt demand for smoked wild salmon, and while demand from the gourmet food sector has yet to recuperate, there has been growth in the sales of smoked wild salmon to natural food stores, especially in northern Italy and even during the economic recession, which promises to strengthen as Italian consumers regain confidence in the economic situation.

Cod: We know from discussions with trade members, that Italy is one of the world’s largest consumers of salted Alaska cod. Salt cod trade figures do not distinguish between Atlantic and Pacific cod, and since Alaska no longer exports significant amounts of salted cod (almost all Alaska cod is exported frozen, to be salted in Europe, Canada or China) we cannot make a direct measurement of this market.

Salted Pacific cod, predominantly of Alaska origin and processed in Denmark, is popular in Italy because it is whiter than other salted cods. Salted Pacific cod has been able to maintain its market position in spite of abundant, low-priced Atlantic cod thanks to packager and retailer preference for whiter cod combined with ASMI-sponsored Alaska cod in-store promotions.
The overall market for salted cod in Italy (above) looks to be in slow decline, as in Spain, as modern consumers opt for the lower price and greater convenience of light-salted cod fillets. The bar graph below shows the growing import volumes of frozen cod fillets, predominantly light salted, which surpassed 6,000 MT in 2014-15 and are taking market share from traditional salted cod products. Light-salted Atlantic cod has been gaining market share over Pacific cod due to the exceptionally low Atlantic cod prices of the past couple years. We expect Pacific cod to gain market share as prices return to more normal levels.

Trade sources indicate that roughly 2/3 of the frozen Pacific cod fillets imported to Italy are of Alaska origin and 1/3 from Russia, and that this would hold true for the salted cod fillets imported as well (see graph below).
